The chickpea porridge looks very similar to an omelette, which is why the dough is used in combination with, for example, asparagus, vegetables of your choice or with your favorite spices .

675 ml of water at room temperature
215 gr. This

40 ml EVO oil

Procedure
Sift the chickpea flour into a large bowl and mix it slowly with l’ water. Then, using a whisk, add the previously mixed oil and salt mixture.
Let the covered mixture rest for a 4- 8 ore .
Then pour the mixture into a pan of 26 cm in diameter previously greased or with parchment paper.
Turn on the oven at 220 ° and place the pan on the lowest shelf for 10 minutes if the oven is traditional e 7 minutes if it is ventilated. Move the porridge to the middle shelf for others 15 minutes in a traditional oven or 10 if ventilated oven.
At the end of cooking it can be sprinkled with your favorite spices or herbs.
